Transformation Tuesday: Pineapple-Upside-Down-Mug-Cake

I kept seeing people mentioning Shakeology mug cakes (NOTE microwaving/heating Shakeology kills a lot of the probiotics and alters the nutritional components it is so good for so I actually "bake" with a cheaper but Stevia sweetened protein powder and don't substitute my daily shake with this recipe) ... so I found me a recipe and tried it out.

It was good! A little dry ... but hey, it's CAKE without using any yellows, right?

Then I thought ... what about yellow cake? I love chocolate but chocolate cake isn't actually my favorite - yellow cake is. I made it plain, and it was ok. I made it with chocolate chips and it was good, but a cheat. But THEN ... 

This variation is moist, tasty, and a less-syrupy-sticky version of pineapple upside down cake. WITHOUT USING YOUR YELLOWS! I wouldn't recommend eating it every day but when you've got a craving for cake ...

What it will "cost" you (container counts):
1 1/2 red
1/2 (debatable) blue
1/2 purple

Yes. Really.

(The vanilla and frozen cherries aren't in the picture, the recipe developed as I went)

What you need:
Vanilla protein powder (I used cupcake flavor designer whey lite)
1 egg (I used a duck egg)
1/4 teaspoon baking powder
1 tablespoon almond flour
1/4 teaspoon pure vanilla 
3 tablespoons vanilla unsweetened almond milk
A drizzle of honey
1/2 cup frozen pineapple (cut into small pieces)
Frozen cherries

I actually didn't clean my microwave just for this picture, but it was recently cleaned.

What you do:
Mix all the wet ingredients in a mug (I used a Corelle bowl instead)
Mix dry ingredients then stir into you mug
Stir in the pineapple pieces

Microwave on high for 90 seconds (the frozen pineapple makes it take longer than typical mug cakes). I'm not the biggest fan of microwaving but it is what it is ... when you want cake and your trying to avoid a cheat ...

At this point the middle should still be pretty wet ... Plop one of those frozen cherries in there and nuke it for another 60-90 seconds. I kept adding time till it was done to my liking ... I let the middle stay just slightly gooey but if you are paranoid about raw eggs, they are in there.

Plop one more cherry on for looks. It's kinda cute!


But it us pineapple upside down mug cake ... So I turned my bowl over on a plate and it slid out beautifully!!!!


I mean, look at that steam? If you have another purple left some banana "ice cream" might be good!
